Stuffed
Mediterranean Style Boneless Center Cut Pork Roast
“A distinctly
Mediterranean take on what is a beloved classic. The real treat here is most
assuredly in the stuffing, the flavors of which seeps into and permeates the
entire roast as the two cook. The bold and pungent flavor of the capers is ever
present in each bite and clash in a splendid array of flavors with the fresh
parsley and basil while maintains its integrity and ever elegant presence. Yet,
there is a surprising and almost garden like quality of the freshness of the
flavors which one would expect to find only in lighter, more summer orientated
dishes. Simple to prepare and certain to please, this will instantly become a

Ingredients:
3 pounds
boneless center cut pork roast
2 tablespoons
olive oil
1 tablespoon
lemon juice
1 teaspoon LTG
Dry Herb Rub
1 teaspoon LTG
Signature Spice Mix
1 slice lemon
Stuffing:
Juice of ¼ lemons
¼ red pepper
flakes
1 full
teaspoon capers
1 cup Italian
parsley
½ cup basil
½ cup grape
tomatoes
3 tablespoons
olive oil
¼ teaspoon
black pepper
1 small chunk
Romano cheese (about 1½ inch piece)
Preparation:
Preheat oven
to 350°F.
Rub meat with
slice of lemon.
Combine olive
oil, lemon juice, Signature Spice Mix and Dry Herb Rub in a small bowl.
Rub meat well
with this mixture.
Prepare
stuffing ingredients in a food processor and give it a few good chops.
Place meat in
oven.
When meat is
half way cooked (about half an hour) takes out of oven and make about 1-inch
slit
down the middle of the meat from end to end.
Stuff with
stuffing mixture.
Place meat
back in the oven for about another 30 – 35 minutes.
