Low fat Blue Cheese Spread

“Try it with celery sticks, apples, low fat crackers or a slice of chicken breast.  Or put a little dollop on some cooked veggies.  The “cream cheese” base for this is made out of fat free yogurt and many of you may already know the trick for making an inexpensive, low fat cream cheese out of yogurt.” carolinaheartstrings

Ingredients:

2 cups fat free plain yogurt

2 ounces low fat blue cheese crumbles

¼ teaspoon salt

Preparation:

Set up a coffee filter lined strainer over a bowl.

Add 2 cups of fat free yogurt. 

Allow to drain into the bowl, covered, in the fridge for 24 hours.

Drain and mix the resulting “cream cheese” with small blue cheese crumbles and salt.

Serve as desired or season further with raisins, a few bacon bits, etc.
