Apple Walnut Muffins

Ingredients:

¾ cup unsweetened apple sauce

1 cup sugar

2 eggs

1 teaspoon vanilla

2 cups all-purpose flour

¾ teaspoon baking soda

¾ teaspoon ground cinnamon

½ teaspoon salt

1 cup diced apples

½ cup walnuts, chopped

Preparation:

Preheat oven to 400°F.

Grease twelve muffin cups.

Mix together applesauce, sugar and vanilla with a mixer until well blended.

Add eggs.

Beat for 1 minute.

In a separate bowl sift together flour, baking soda, cinnamon and salt.

Add these ingredients to the mixer bowl.

Beat until combined completely.

Stir in chopped apples and nuts.

Spoon the batter into the muffin tins.

Bake 20 minutes until golden brown.

Cool on a wire rack.

Store them in an airtight container.

You can combine these excellent muffins with some other recipes from our collection.

Yield 12.
